These Lentils, from Umbria in Italy, retain their shape when cooked and have a wonderful nutty and earthy yet delicate flavour.  In Italy, these lentils are often cooked with pork, but they are also great in salads or with duck confit, and they are the traditional Italian New Year accompaniment to Zampone di Modena.
